Following a high monounsaturated fat diet can be beneficial for improving insulin sensitivity in both individuals who have, or do not have high blood sugar levels. One study found that following a high monounsaturated fat diet for three months managed to improve insulin sensitivity by up to nine percent (14). This was followed by another study which found participants who had metabolic syndrome and followed a high monounsaturated fat diet for twelve weeks had a significant reduction in insulin resistance (15).
Although fat got a lot of flak in the carb-crazy ‘90s, fat is actually very important to a healthy diet. Fat comes in two main forms: unsaturated and saturated fat. Unsaturated fats are oils — the kind that are fluid at room temperature (such as olive and canola oils). Saturated fats are solid at room temperature (think a stick of butter or glob of coconut oil).
If you’re able to tolerate dairy, full-fat dairy can be an excellent source of heart-healthy fats. Probiotic yogurt, in particular, is a staple on the healthy fats list as it contains beneficial bacteria that can help optimize the health of your gut microbiome to promote better overall health. Upping your intake of probiotics can also support healthy digestion, boost immunity and reduce cholesterol levels. (29)
Additionally, adding plenty of nutritious fats to your diet is just one piece of the puzzle when it comes to health. Be sure to round out your diet with plenty of protein foods as well as a good variety of fruits, vegetables, legumes and whole grains to make sure you’re meeting your nutritional needs, and pair a well-balanced diet with regular physical activity and a healthy lifestyle for best results.
What these studies highlight is that when cutting down on saturated fats in your diet, it’s important to replace them with the right foods. For example, swapping animal fats for vegetable oils—such as replacing butter with olive oil—can help lower your cholesterol and reduce your risk for disease. However, swapping animal fats for refined carbohydrates-such as replacing your breakfast bacon with a bagel or pastry-won’t have the same benefits. That’s because eating refined carbohydrates or sugary foods can have a similar negative effect on your cholesterol levels, your risk for heart disease, and your weight.

Consuming monounsaturated fatty acids may protect you from heart disease by lowering LDL and total cholesterol, improve the function of blood vessels, help prevent depression, improve body composition, and improve insulin sensitivity and blood sugar control (10,11). Monounsaturated fats have even been shown to reduce cancer risk (12). Oils rich in monounsaturated fats also contain the antioxidant vitamin E which has many health benefits.
Nine moderately athletic men took either spirulina capsules or a placebo for four weeks in a study printed in Medicine & Science in Sports & Exercise. Monounsaturated fats. When you dip your bread in olive oil at an Italian restaurant, you're getting mostly monounsaturated fat. Monounsaturated fats have a single carbon-to-carbon double bond. The result is that it has two fewer hydrogen atoms than a saturated fat and a bend at the double bond. This structure keeps monounsaturated fats liquid at room temperature.
Additionally, over 90% of soy, corn, cotton (seed), and canola grown in the US are GMO. Olive oil is not a GMO oil. However, some restaurants blend olive oil with cheaper oil, such as canola oil. There are serious health risks associated with GMO foods, including immune system malfunction, accelerated aging, changes in the gastrointestinal system (leaky gut), and faulty insulin regulation.
What’s that, you say? But people who eat fat are fat. Well, no, not necessarily. Let us explain: Our bodies need dietary fat (which is why many fats are called “essential”) in order to lose weight and function properly. The right kinds of fats help increase satiety, maximize your metabolism, protect against heart disease, speed nutrients through your body, and improve your fat-soluble vitamin uptake. Not to mention, most unprocessed, high-fat foods also come packaged with many of those important nutrients, from vitamins and minerals to free-radical fighting antioxidants.
For years, only true diet detectives knew whether a particular food contained trans fat. This phantom fat was found in thousands of foods, but only those familiar with the “code words” partially hydrogenated oil and vegetable shortening knew when it was present. Fortunately, after a large body of research in the 1990s sounded the alarm on its deleterious health effects, a series of policy initiatives led to the near elimination of artificial trans fat in the U.S. food supply by 2018. However, the road to eliminating trans fat was not so straightforward, and outside the U.S. there’s still more work to be done. Since sources of fat are more calorie-dense, it is important to understand what a serving of a fat is equivalent to. For example, one teaspoon of butter, margarine or mayonnaise is one fat serving. For times when you may not have a measuring spoon available, a visual equivalent of one teaspoon is the tip of your thumb. See below for examples of serving sizes for added fats.
Omega-3 fatty acids. One type of polyunsaturated fat is made up of mainly omega-3 fatty acids and may be especially beneficial to your heart. Omega-3, found in some types of fatty fish, appears to decrease the risk of coronary artery disease. There are plant sources of omega-3 fatty acids. However, it hasn't yet been determined whether replacements for fish oil — plant-based or krill — have the same health effects as omega-3 fatty acid from fish.
All digestion first takes place in the mouth from chewing and saliva beginning to break down food. After you eat a fat-containing food, such as almonds, you first break down the food in your mouth. Next, it goes to your stomach where those solid pieces of almond are further broken down via stomach acid (2). Fats actually hang out in the stomach for quite a bit which is one reason for why fat keeps you feeling fuller longer. Depending on the volume of food and components of food, healthy fats may keep you feeling full for hours.
A fascinating Swedish study found that when diabetics ate a low-carb, high-fat diet (50 percent fat, 20 percent low-glycemic carbs, and 30 percent protein) they lost equal amounts of fat after 6 months (4 kg) as a group that ate a low-fat, high-carb diet (30 percent fat, 60 percent carbs, and 10 percent protein). The low-carb, high-fat group decreased insulin and had better blood sugar regulation than the high-carb group, indicating better metabolic chemistry.
Flaxseed is available in health food stores and many supermarkets, sold as whole seeds, ground seeds, or oil. Although flaxseed oil contains ALA, Magee says ground flaxseed is a much better choice because it also contains 3 grams of fiber per tablespoon, as well as healthy phytoestrogens. Other sources of omega-3s include canola oil, broccoli, cantaloupe, kidney beans, spinach, grape leaves, Chinese cabbage, cauliflower, and walnuts.
But while there’s still a good amount of debate on the question “Is saturated fat bad?,” there’s no arguing that trans fats should be cut out of your diet altogether. Trans fats are often added to foods through a process called hydrogenation, which is used to increase the flavor and texture while extending the shelf-life of foods like vegetable oils.
Fat droplets start to pass through the duodenum where bile acids are added (bile acids are from cholesterol in the liver and stored in the gall bladder). Bile acids are really cool because they act like soap breaking and emulsifying the fat droplets and making them into even smaller droplets. I like to use the visual of washing a pan with grease on it with soap, at first the grease barely comes off, but with a little muscle and scrubbing with soap the detergent breaks up the fat and grease into very small particles until it’s gone.
So you might assume that fat is to blame for the obesity epidemic now plaguing our nation. Actually, fat is only part of the problem. Obesity is much more complicated than just overeating a single nutrient. Eating more calories -- from fats, carbohydrates, protein, and alcohol -- than you burn off leads to weight gain. Simply put, people who get little physical activity and eat a diet high in calories are going to gain weight. Genetics, age, sex, and lifestyle also weigh into the weight-gain formula.
Several studies explore and show the this type of saturated fat in coconut does not negatively affect cholesterol levels nor overall heart health like we were once told. Some studies have shown coconut oil moderately increases metabolic rate, which is often a “selling” point that it helps boost your metabolism and contribute to fat loss or weight control. I’ll let these studies here, here, and here tell you what we do know.
